Review:

I don’t know about you, but there is something about fresh ingredients that make a meal climatically rise from “good” to “wow.” I put chefs on a very high pedestal who make the extra effort to provide their customers with the best ingredients. After working in the food and beverage industry for eight years, I’ve come to realize that we live in a society where quantity overrides quality. Many restaurant businesses have decreased the quality of their ingredients so that they can make more money. I’m not trying to hate on those who do this orruffle anyone’s feathers. The point I’m trying to make is that our food has been skewed in a way that we are missing out on truly enjoying natural flavors and utilizing the native resources we have. We’ve shifted to genetically engineered and artificially altered foods for the sake of convenience and cost. We gotta eat to live, right? Why not slow things down like our Latino and Mexican pals and enjoy this life and the wonderful food we have? Savor the moment and the ingredients! #savortheflavor With that said, I have found a gem of a truck that values quality and still pumps out quantity. They set an example for how food should be – a quality experience.

Wholly Frijoles has rooted itself in exclusively serving authentic Mexican cuisine that captures the essence and integrity of true taquerías in Mexico. They pride themselves with having the ability to serve up food that is made from premium local ingredients. In addition to its undeniably fresh nature, their menu is spiced up with unique taco concoctions such as the Carnitas taco, which encapsulates slow cooked pork topped with crispy onions, homemade chipotle BBQ sauce and cilantro in a freshly made corn tortilla. #delicioso That was one of three tacos I chose for my lunch on that fine Walnut Wednesday. The other two were: Tequila Lime Chicken (chunks of chicken that have been marinated in gold tequila and lime garnished with sweet sautéed onions, queso fresco and cilantro lime sour cream) and Corona Braised Beef (slow cooked in Corona and shredded, topped with pico de gallo, sautéed onions and cilantro.) Muy bien just doesn’t even cut it! But I honestly don’t know any more Spanish adjectives so it’ll have to do. I clearly benefitted from three years of Spanish in high school. I can’t even properly express my love for Mexican food in its native tongue! #letdown
